Tailgating recipes from Diesel Atlanta

Justin Haynie, known as the "Tailgating Chef" and owner of Diesel Atlanta, shared some of his popular recipes with Good Day Atlanta!

Recipes:

Bacon Wrapped Jalapenos

Ingredients:
Fresh Jalapenos
Boiled Shrimp 50-60 count
Bacon
Skewers (soak in water for at least 2 hours)

Prep -  Cut the top off of each jalapeno. De-seed and remove membranes. De-tail shrimp (peel and de-vein if necessary). Slice each piece of bacon in half.

Directions -- Place one shrimp inside each jalapeno. Wrap the bacon around the jalapeno and skewer. Repeat till skewer is full

Cooking -- Place skewers on grill. I prefer to use in direct heat. They should take around 8 minutes per side, or until bacon is cooked to your liking.

Tip: You can pre cook the bacon in the oven if you prefer your bacon crispy.

Cilantro Lime Ranch Dipping Sauce

Ingredients:
Ranch
Sour cream
Lime
Cilantro

Directions: Mix equal parts ranch & sour cream. Add the juice from one lime and ½ bunch of cilantro.

Beer n Cheese Spread

Ingredients:
1 block of sharp cheddar
2 garlic cloves
¼ chopped onion
4 dashes hot sauce
Salt & pepper to taste
Pinch of crushed red pepper
Bottle of beer (I prefer a heavier beer, amber or porter works well)

Directions: Shred entire block of cheese. Mix all ingredients (except beer) in a food processor. Slowly pour in the beer while you are mixing all ingredients.  Serve with corn chips or pita chips
