Atlanta Soup Diva Jenny Levison, known as Souper Jenny, has a new cookbook out where she tackles salads. And she has provided Good Day Atlanta with a great salad recipe!

Recipe:
Roasted Butternut Squash, Baby Spinach & Bleu Cheese with Maple Ginger Vinaigrette

This is an easy salad that looks fancy and is perfect for the holidays. You can now find fresh butternut squash peeled and cubed in most grocery stores.

Serves 6

3 cups butternut squash, peeled and cubed
2 tablespoons extra virgin olive oil, plus 1 cup for dressing
1 cup toasted pine nuts (toasted in 350 degree oven, 15 minutes)
2 fingers ginger, peeled and grated
1 tablespoon fresh lemon juice
¼ cup apple cider vinegar
1 cup maple syrup
Salt and pepper
12 cups fresh baby spinach
2 cups crumbled bleu cheese

Preheat oven to 450 degrees. Toss butternut squash with 2 tablespoons olive oil. Spread on a baking sheet and roast for 30 to 40 minutes, turning several times, until cooked through and lightly browned. Cool to room temperature.

Prepare dressing while squash is roasting. In a food processor, puree together ginger, lemon juice and vinegar. Add maple syrup and while machine is running, slowly drizzle in remaining cup of olive oil. Salt and pepper to taste.

In a large bowl, toss spinach with buttered squash, bleu cheese, pine nuts. Add dressing to coat.
