1 to 1 ½ Cups Granulated Sugar (depending on sweetness of peaches!)
½ Cup All Purpose Flour
½ Teaspoon Iodized Salt
½ Teaspoon Ground Cinnamon
3 Tablespoons Instant Tapioca
Instructions:
Combine all ingredients sequentially, let rest for 10-15 minutes, then mix again. Add filling to 9" pie crust, cover with top crust or lattice, seal the edge, trim, and crimp or flute. If using a close-top crust, cut steam vents. Sprinkle crust with 2 teaspoons of sugar. Bake at 350°F for 1 hour until crust is golden brown. Let cool completely on a rack before serving. This pie is best the day it is baked, but it can be stored at room temperature for up to one day. Makes one 9" pie.
