Food 101 celebrates National Fried Chicken Day

For the past 12 years, Food 101 in Atlanta has been serving what some call the best fried chicken in town. Executive chef Justin Keith stopped by Good Day Atlanta with his special fried chicken menu that he will be serving throughout the day on July 6 - National Fried Chicken Day!

Tips for great fried chicken:

1. Use fresh, quality chicken – no antibiotics/hormones (ex: White Oak Pastures, Springer Mountain, Belle & Evans)
2. Brine chicken  (ratio 1 qt water/ ¼ cup kosher salt).  Leave in brine for a minimum of  4 hours, and preferably overnight
3. After brining, marinate chicken in seasoned buttermilk for a minimum of 4 hours
4. Season your flour
5. Fry with peanut oil (which has a high smoke point and best flavor)
6. Fry at 350 degrees
7. Don't overcrowd the pot/pan
8.  Cook to 165 degrees
9. If possible, use cast iron pan

Recipe: Green apple & horseradish potato salad

Serves 4

2 1/2 lbs red potatoes
3 tbs cider vinegar
¾ cup Dukes Mayonnaise
1 tbs whole grain mustard
2 tbs prepared horseradish
½ red onion – julienne
4 ribs celery – sliced
1 Granny Smith apple - sliced
Salt and Pepper
 
Directions

Dice Red Potatoes and cook in a pot of water at a strong simmer until fork tender for about 30 minutes.  Be careful not to overcook.  Strain and allow to cool.  In a small bowl, mix mayo with cider vinegar, grain mustard and horseradish.  Season with salt & pepper. Combine the red onion, celery, and apple with the cooled potatoes. Add Mayo mixture and mix well. 
Taste for seasoning.  Refrigerate until ready to serve!
