
Chef Sammy Davis spoke with Tom Haynes on Thursday and offered several recipes for a July 4 cookout!
BBQ catfish in a sweet lemon sauce:
1, 6 oz piece of catfish cut into nuggets
1 freshly squeezed lemon
1 cup of SWEET BABY RAYS BBQ SAUCE
salt and pepper
fresh garlic
chopped scallions.
Honey glazed Cornish Hen:
1 cup of
teriyaki sauce
1/2 cup of honey
1 whole Cornish hen
1 tablespoon of Montreal
Steak Seasoning.
Chicken Satay Skewers with Thai peanut dipping
sauce:
1 6oz chicken breast cut into 2oz lengthwise portions
1/4 cup crushed
peanuts
1 beaten egg
1 sprig of cilantro finely chopped,
1 bottle of BANGKOK
THAI PEANUT DIPPING SAUCE
Georgia Street Taco:
1 flour tortilla
shell
1- 3oz piece of tilapia
1 tsp of Cajun seasoning
1 diced Roma tomato
1oz of iceberg lettuce
