Recipe:

Cheese Pleasers
Ingredients
1 cup shredded Cheddar cheese
1 1/4 cups whole wheat flour
1 egg
½ cup of milk
1 tablespoon of butter, softened
Cooking spray
1 teaspoon of water
Directions
1. Preheat oven to 325°.
2. Place cheese and flour in bowl and mix at medium speed. Add egg, milk and butter gradually, mixing until soft dough is formed. Sprinkle flour on hands to shape dough into ball. Set dough aside in mixing bowl and cover bowl with clean kitchen towel. Let rest for 20 minutes.
3. Grease cookie sheet with cooking spray and set aside.
4. On slightly floured board, roll dough 1/4 inch thick and cut with small cookie cutters. Place cookies on a greased cookie sheet.
5. Bake for 15 minutes in preheated oven, or until nicely browned. For softer cookies, remove from oven immediately. For crunchy cookies, turn oven off to let cookies dry for one hour.
6. Cool cookies completely before putting into air-tight container or plastic bag.
7. Store in refrigerator or in freezer for future use.
8. Optional Egg Wash: Prior to Step 2, separate egg yolk from egg white. Set egg white aside in small mixing bowl. Between Steps 4 and Step 5, whip egg white with fork in an over and under motion, slowly adding one teaspoon of water until the mixture is light and slightly foamy. Dip pastry brush into egg wash so that about 1 inch of the bristles are covered from the bottom. Apply egg wash to tops of cookies. Avoid dripping egg wash on cookie sheet (which can lead to cookies sticking to pan).
Original Recipe Yields 6 dozen medium size cookies
